Because the SEC is bigger than Texas, and A&M was tired of being the little b!tch to Texas.
Consider this:
This is the weekend of the Texas-OU game in Dallas. No way does A&m vs Baylor, Okla St, etc trump that.
A&m vs Tennessee isn't just the big game in Texas, it's the big game in the country. All on Texas-OU weekend.
Screw A&M. Can't stand their fans and if anybody wants to know why, go get a little dose of what they're saying on SECrant.
TexAgs made a documentary called SEC Ready; the trailer linked below will kind of give you a flavor for the pieces that were in motion and why the decision was made to leave. A&M left for a lot of the reasons pointed out already in this thread.

It's surprising how far they have fallen since the 2010 BCS championship game. We make fun of Georgia and Florida and their inherent advantages but man, Texas has every advantage and really should be a dominant college football powerhouse. But they're not. I think TX is so huge there are so many D1 colleges and of course outsiders recruiting that TX is a lot like TN where you really have to have the right coach to make everything work.

There's no reason why Texas and USC shouldn't be in the top 10-15 every year with occasional flirts with #1
I agree there are a lot of schools, but there are tons of players too
