Get rid of OU and play UNC instead. We will play OU plenty.
I highly doubt that game ends up happening. Even if the SEC doesn't expand until 2025, Oklahoma's portion of the home-and-home was lost to the COVID-19 season; why would the Sooners come to Knoxville and play an OOC game a year before joining the conference, sacrificing a key home tilt in doing so?

Give me another Battle at Bristol (Virginia Tech, Clemson, Louisville or UNC) or a neutral site in an unusual city (Maryland in D.C. or Utah in Las Vegas, maybe) if Danny White isn't able to negotiate a P5 buy game/home-and-home where the return leg is 7 years away.

Arkansas State would be a fun matchup.
Let me tell you exactly how that game would go:

Ark State gets the ball first and puts together an impressive drive. They kick a field goal and go up 3-0.

After that, Ark State plays an absurdly conservative level of football trying to “play field position” and not take risks in order to sit on the lead. Run-run-run-punt the very next drive and every drive after.

Tennessee wins 84-3.
