To cover the spectrum, cook red okra down into a goo. After you’ve slowly added the stock to the roux, blend in the okra goo. Then, when the gumbo is 15 minutes to serving, blend in the file to perfect the consistency and bump up the umami.
I canned (ok, jarred) pickled okra this summer. I thought I'd be having it in Bloody Marys, but somehow that didn't happen. Daughter #2 raved about it, though.
