Heard of what? Farmed scallops? I can't read the article so if your talking about something else I still haven't heard of it.

Yes, been eating them for years. I'd rather know I was eating good clean farm raised scallops than not knowing if I was eating skate or not.
Oh sorry, I didn’t realize that it was behind a firewall. Yes, it was talking about farmed scallops. I didn’t realize that they could be farmed.

“There are only a handful of sea scallop farms in the United States, and most are in Maine, run by fishing families who, like the Brewers, are looking for ways to diversify beyond lobster while still keeping their boats in the water. But their number is growing.

“Bivalve farming (along with kelp farming) is one of the most environmentally beneficial types of aquaculture, considered a zero-input food source because it doesn’t require any arable land, fresh water or fertilizers to grow protein. You don’t even need to feed bivalves; phytoplankton already present in the sea will sustain them.

“Bivalve farming also doesn’t compromise its habitat: In fact, the presence of shellfish like scallops, mussels and oysters actively improves it by filtering the water and increasing biodiversity.

“Scallops may even go one step further, reinforcing the local wild scallop population, something that’s been shown to occur with oyster populations…

“In terms of flavor, the farmed and wild sea scallops in Maine are identical: almost candy sweet, with a distinct briny, umami complexity. The cold, deep waters of the Gulf of Maine are particularly well suited to scallops and other shellfish, giving them an incomparably rich, saline flavor. You can have them raw, slurped right out of the shell with the roe still attached, their adductor muscles a little twitchy and as bouncy as jelly. But they’re also compelling lightly cooked, which firms them up and makes them meaty and dense…”

Heat the pan, not non stick, iron skillet is best, to 450-500 degrees. Pour a little oil in the pan. Dry the scallops and Salt and pepper one side and put them seasoned side down in the pan for about a minute. Season the unseasoned side then flip it over and cooked it for about a minute, 2 at the most.

Non-stick? Ok, absolutely trying that. Thanks.

You can't heat a non stick pan hot enough. Without damaging it and or ruining the scallops.
What did I miss? I thought you said to use non-stick. I have a non-stick that I use for frittatas etc. And I have definitely seen what happens with high temps.

Otherwise, I have a triple-clad(I think???) stainless steel skillet and a cast iron skillet that I use for everything else.

Sorry to hear that Behr. I found out one of the other Army recruiters here locally lost his wife today. Not exactly sure if it was Covid or another battle.

This is what I do for except I season both sides before placing in the pan. Never thought to wait on one side.

If I had the money you all think I do, I would eat scallops two meals a day.

If you had the money I think you do that's exactly the type of thing you'd say.

Prayers for him and his family.

This virus thing is an uneasy feeling when it hits close to home. All I can do is pray for all those families that have lost someone due to it and keep on keeping on with life. But when it starts sneaking in to my hoola hoop, I pay closer attention. Still not much I can do except thank the good Lord me and those close to me haven't had to deal with it.

Thanks. Prayers for you, the family and the church. I wish my dad had tried the antibodies test because I still think he had it in February of ‘20, before it really took off. Other than that, my circle has been clean. But I was very cautious, especially while living in DC. I’ve had friends I haven’t seen in ages or friends of friends get it, but nothing close to me. Thankfully.

I feel bad because we only see the other local recruiters about once a month, and I’m not even sure who this guy is. I just know he falls under the same chain of command. Sad all around though. He has 4 kids. So I’m sure they could use all the comfort imaginable

I season after I flip (I think because Behr told me to before), But I also squeeze lemon juice after I flip.
