List your ingredients, please. No amounts, necessary. I'm curious what you put in it besides yrsherry and crab.

Most recipes call for flour for roux (personal choice, I don’t like it)., sautéed onion, (Id rather use a combo of shallots and yellow onion), butter, besides crab, broth (my choice), cream, and of course the crab. I personally don’t like it at all, but my family does. Adding flour to make a heavy broth hides the crab, with the cream and sherry.
 
Thumbs up on the sherry, and what do you build your soup on if it's not some sort of flour base?

Soup doesn’t always build upon anything flour base. If a true Carolina She Crab, no base.

Seafood stock. Personal choice. Cream base soups use the flour base.

Your first answer is why I asked for your ingredients, I was confused.

Technically a true Carolina She Crab recipe does use a base. Its original recipe used puréed boiled rice to thicken it. I tried it years ago and didn't care for it.


I won't go into the Tl;Dr version on how I gave myself the self proclaimed title of expert on She Crab, NE style Clam Chowder and Manhattan style Conch Chowder, but you could say at one time it was a Labour of Love.

FWIW, blue crab mating season is usually May to October along the Atlantic coast of the Southeastern US.

Truthfully, I thought this was a mac & cheese trap. The recipe came from a person that worked at Duck Inn in Virginia Beach. I loosely based it off of that. Never ate it myself, hate seafood.

I know the Snook Inn and their Conch chowder. Couldn't tell mine from theirs except mine had a little more bite.
