My mother made a great lemon icebox pie with a crushed vanilla wafer crust. It was only when I read the recipe for key lime pie in Joy of Cooking that I realized it was identical to her lemon pie, other than the fruit.

This edition of Joy of Cooking, as debates over the “real” version can reach Waffle House proportions (my original copy with a paper cover was scarfed up by my ex-husband’s replacement wife - she was welcome to have him, but I did not take kindly to her taking my cookbook, including the handwritten recipes and the notes in the margins):

It really is, and so easy to make. Just crush the vanilla wafers for the bottom crust, and use whole cookies for the side.

I love lemon ice box pie a little more than key lime. I know it’s not as good as your mother’s but Edwards makes a frozen lemon meringue pie that sounds just like what you described.
