The ministry I work for is putting together a cookbook. we have done this in the past to raise money and it was very successful. I am looking for recipes that have a Tennessee flavor. I can find the recipes online, if you guys can suggest some dishes. I already have buttermilk biscuits and pecan pie.

Not sure if this qualifies, but here's my recipe for salsa.

1 28oz can petite diced tomatoes (drained)
2 10oz cans Ro-tel (drained)
1/2 to 1 cup chopped onions
1TBS Cilantro
1tsp lawry's
1tsp black pepper
1/2 tsp crushed red pepper
1/2 tsp Morton's Hot Salt
zest and juice of 1 lime.

If you can find Jane's Crazy Mixed Up Salt, use it instead of Lawry's

This is Tiger Den's wife. These are a few of my favorites from my mom's recipes.
Trust me all of these are delicious!!!!!!

Squash Dressing

2 cups sliced yellow squash
2 cups cornbread
1 can cream of mushroom soup
1/2 stick melted butter
1 onion, chopped

Boil squash with 1/2 cup of the onion in medium saucepan till tender.
Drain and mash, then drain again.
Add all other ingredients, including the rest of the raw chopped onion.

Bake in a greased casserole dish at 350 degrees for 30 minutes.


Broccoli Cornbread

1/2 cup melted butter
1/3 cup chopped onion
1 tsp salt
3/4 cup cottage cheese
1 pkg. frozen chopped broccoli, thawed and drained
3 large eggs, beaten
1 pkg Jiffy cornbread mix

Mix butter, onion, salt and cheese. Stir in broccoli and eggs. Add muffin mix. Then I stir in a 1/2 cup of cheddar cheese. Pour into greased 13 x 9 x 2 baking dish or pan. Bake at 400 degrees 20 - 30 minutes until browned on top.

A couple more.

Chocolate Chess Pie

1 1/2 cups of sugar
3 Tbsp Cocoa powder
2 whole eggs
1 stick butter, melted
1 small can PET milk
1 tsp vanilla
1/2 cup chopped pecans

Mix all ingedients together except pecans. Pour into unbaked pie crust. Sprinkle pecans on top of pie. bake 30 - 40 minutes at 350 until set. (Sometimes it may take a little longer, depending on your oven but you will be able to tell when it is set)


French Coconut Pie

1/2 stick melted butter
2 eggs beaten
1tbsp all purpose flour
3/4 cup sugar
1 cup coconut
1 cup milk

Mix all ingredients together and pour into unbaked pie shell. Bake at 350 for 45 - 60 minutes.

Here's one more. Hope these will help.

Shoe-Peg Corn Casserole

2 cans White Shoe-Peg corn, drained
1 stick melted butter
1 block of cream cheese
1 can diced green chilies
Crushed Ritz crackers

Mix all ingredients together. Pour into casserole dish. Cover with crushed Ritz crackers and dot with butter. Bake at 350 for 30 minutes.

Mmmm.... you're making me hungry! I have to wait until Thanksgiving to have any kind of homemade, southern cooking!

I've never heard of CHOCOLATE chess pie, but Chess pie is a definite TN recipe! :good!:

What's chess pie?

Chess pie differs from other traditional pies because you use cornmeal and vinegar instead of flour.
I know it sounds weird but it really is very good.

Chess Pie

3 eggs
1/2 stick butter
1 tbsp vinegar
3 tbsp corn meal
1 tsp vanilla
1 1/2 cups sugar
3 tbsp of milk

Mix all together and pour into unbaked pie shell at 350
45 - 60 minutes.

The cook is in the house. If it wasn't for Tray I'd weigh about a 100 pounds. I've never had anything that was not a 10 on a scale of 5 from that lady. Tray go ahead and put the enchilada dish on here. Man, is she a good cook.(pretty too) sorry den.facts are facts.

I like to cook, but I don't usually follow strict recipes. If you are interested and it would help the cause, I can start working on a few things for you. Some of my favorite dishes are Sesame Seared Ahi Tuna, Pan Seared Scallops with Red Pepper beurre blanc, Macadamia Encrusted Sea Bass with Mango Chutney, Proscuttio and Basil-Wrapped Grilled Scallops, Three Meat-Three Cheese Stuffed Shells, Dry-Rubbed BBQ Ribs, Chicken Marsala, and my famous Seafood Pasta (lemon-wine sauce/tomatoes, artichokes, mushrooms, capers, and Greek olives).

PM me and I'll work on figuring out measurements and instructions!

Chicken and Dumplin's

1 stewing hen
1 tsp salt
3 cups flour
1/2 cup cold water
1 egg
1 heaping Tbs shortening

Cut chicken for stewing. Barely cover with water and cook until tender (2-3 hours).
Remove chicken from stock and debone. Put flour in mixing bowl. In center of flour put egg, shortening and salt. Gradually add cold water. Work plenty of flour into the dough. Roll dough out thin and cut into 2 x 3 inch strips. Drop into fast boiling broth one at a time. When all dumplings are added, lower heat and simmer 12-15 minutes. PLace chicken back into the stew. A little butter may be added if the chicken is lacking in fat.

Fried Catfish

6 small catfish thawed
1 tsp. salt
2 cups self-rising cornmeal
1/4 tsp white pepper
corn oil

Pat cleaned catfish dry and season with salt and pepper to taste. Pour cornmeal into a paper bag and drop in catfish one piece at a time. Shake bag to coat fish. Fry in deep hot fat until golden brown. Drain well and serve hot.
