I basically agree, I have tried a sauce at the Dixie BBQ in JCity that they call a Carolina sauce that is good.

Maybe you can help me on this. In high school we played against DB and after the game me and my parents went to a nearby BBQ place.

I rememeber these things:

-It was in a barn type building.
-On a somewhat busy highway.
-Had a Cracker Barrel-esque "Country Store"
-Had six pack holders with 6 different types of sauce.

I can't remember the name but I remember it was some good stuff. It may be Dixie BBQ???

You guys missed some d@mn good BBQ this weekend in Memphis. Oh, and beer also. I love Memphis in May BBQ contest.


Missed it by two weeks :cray:

Last time I was able to make it, there were tornado sirens and all hell broke loose downtown. It was a blast

I missed it but my parent's group actually won 2nd place for ribs in the patio (amateur) division. They weren't upset because 1st place means you have to move up to the big, expensive division. Now to get them to cook the same ones when I come home :)

Sounds just like Pratts, except for the Indian. Dixie BBQ is in Johnson City.

I realize this is not BBQ, but I'm too lazy to find the old thread re grilling steaks. Whoever shared using olive oil as a marinade has my thanks. I grilled some NY strips after rubbing on olive oil and garlic along with Magic salt and letting them sit about an hour and a half. Even though they were Omaha Steaks, they were excellent. I cannot wait to try it on some fresh cuts. Don't knock it til you try it.

Yall ever been to this place in Mason, TN. I think it's called Bonanzas, or Bozoos or something like that. I used to go there with my grandparents a long time ago...i just remember flashes of the place, that's about it.

I cook them in the oven with a BBQ/garlic/beer/seasoning blend, covered, for about an hour and a half, then finish them on the grill with wood smoke and Rendezvous dry rub. You've got to keep the heat low. Very tasty. Best part: the ribs were on sale at Target last week for $2/pound. I fed 7 hungry family members for about 25 bucks.

If I would have known that, I would have bought all I could fit in the freezer. You are absolutely correct, slow cooking is paramount for decent ribs, and your recipe sounds worth trying. Care to share the details?

Get a t-bone, rub it with equal parts of oregano, crushed parsley and kosher salt, let it rest for an hour and grill. Be sure to scrape the rub off halfway through the grilling process elsewise the oregano may become bitter.

Never liked Ridgewood all that much, never went to JC looking for ribs, but I will try 12 Bones the next time I'm in KPT

people knock it with a good dry rub, but it's perfect every time.

FYI broyles, while I still can't come up with the name of this place in Erwin, I remembered they also have barbecued shrimp that is out of this world delicious.

No problema. I mix up about 1 part good bbq sauce (Rendezvous, Stubbs, etc), 1 part beer, and dry rub seasoning, a little worcheshire, olive oil, garlic, black pepper, and hot sauce. Pour that over the ribs, cover in foil, and bake at 325 for about an hour and a half. Heat a grill over low heat (preferably with some wood chips to taste -- mesquite or hickory for me), and spray the grates. I baste the racks with a little cider vinegar and sprinkle with Rendezvous dry rub (available at Target in K-town, or online at hogsfly.com) and cook for about 15 minutes, turning and re-basting frequently. Don't let the grill flame up -- you can spray flames with a squirt bottle if necessary. Serve the ribs with warm BBQ sauce of you choosing (again, I'm a big Rendezvous fan).

Enjoy!

Thank you!! Cannot wait to try it. Never tried Rendezvous sauce, I usually make my own, hickory chips are my choice for BBQ.
