Took the buffalo chicken dip last night and they cleaned the dish. Everybody LOVED it! It was the biggest hit of anything there.

Cheesy potatos, very easy.
1 bag southern style hash browns (chunky not shredded)
1 small package of velveeta cheese
1 small jar of Hellmans mayonnaise

Melt cheese in microwave and mix with potatoes and mayo. Put in baking dish and bake at 350 until bubbly and starting to turn golden brown. Tasty.

Here's how I do mine.

Set the oven to 350º. Spray a tad of non-stick spray in a casserole dish. Take a block of cream cheese and cut it into cubes and put in the oven (it'll melt a little while you're getting everything else ready).

In a bowl, put 1 cup of shredded cheddar cheese, shredded chicken (I boil a couple of chicken breasts and shred that), 1/2 ranch salad dressing, and 1/2 cup Franks hot sauce. Stir all that around, then put it in the dish with the cream cheese and stir all that around, then heat it in the oven for about 20 minutes.

Easy! And sooo goood!

made this tonight. Its always a hit. I always use a rotisserie herb chicken and just use the breast from it. Include the skin, it adds flavor.

Also I make a cheesecake sopapilla that every one loves. Recipe is below. You will not regret trying this recipe. I promise! Enjoy!!!

Block of cream cheese topped with Mango pepper jelly and spread on cracker of choice.

Is that mango pepper jelly a Harry and David concoction?

The one I use isn't, but they have some. Most gourmet shops have several different pepper jellies and all seem to be pretty good. I tend toward the hotter, but they come in all ranges of heat and flavor.
