Polenta is delicious. Grits are meh.

I know they're different, was just making the mandatory Southern joke about it.

However, IMHO, it's the opposite. Grits are delicious, polenta is meh.

But that's why God made different colors...

... so that each one of us could have our favorite.

It was okay the first night (added garlic, shallots, and parm). But I wanted to grill it the next night, and it wasn't anywhere close to set after being refrigerated. Oh well. Solved a curiosity I had. And used up some of my cornmeal.
 
My friends girlfriend asked me to make biscuits last night. While the pork butt was resting, I cranked up the smoker to 300 degrees and put 12 homemade garlic from a jar and sharp cheddar chez biscuits on.

Excellent. They weren't too "smokey" in general, but the smoke flavor did overwhelm the garlic and chez.

Next time. Fresh Parmesan and fresh chopped garlic. I think that will be a winner.

I have many random food thoughts right now gobbler. I will post them in the thread that was designed for comments on food. If you don't find that entertaining or lulz worthy, I suggest you stfo.
 
I made hash browns this morning and thanks to comp's "secrets", they were freaking perfect.

Publix has Sockeye Salmon on sale right now advertised as "Fresh Never Frozen" and it looks pretty good. Reminded me of your post about it.
 
just put a 5 lb pork butt on. Gonna cook it at 275 for awhile. Rubbed it in mustard and Jack Daniels pork rub. Its a little spicy, but I wanted to try it on something.

I did. He mentioned it was silver salmon. Never heard of it before, but it's great. Glad the hash browns turned out well. Thinking of putting out a hash browns cookbook.
 
Ha...google is my friend. Silver salmons other name is coho salmon. Also says best way to prepare is poached with a yogurt sauce.
 
Somebody link the hashbrowns conversations for me? (Or tell me what post # if it's in this thread please?)

I have 4.5lbs of Instant Corn Masa Flour. Other than masa harina pancakes, what should I do with it? I don't have a tortilla press. Could I still make them using something else? (And I have no idea why this brand says "instant". The only ingredients listed are White Corn, Lime.)
