It's key.

You won't taste the "raw fishy" flavor. Just like you don't in a Caesar salad dressing.

Behr, what are you eating for Easters?

Not sure yet GBO, It'll be just me and Behr mañana, so I'm not gonna make a lot of anything. I do have some Lima beans that have been soaked and separated, and a nice smoked ham hock in the freezer that may end up on the stove in the morning.

You have big plans?

BTW, I'm not gonna start a thread about it but I am interested what's on everyone's Easter menu tomorrow. Post them here if you want, I'll read them.

Easter? Tomorrow? WTF? How am I supposed to keep up with the after Easter candy sales when they keep changing the date every year.

We're going to Tony's mom's. She's fixing a ham, rolls, and pina colada cakes. SIL's are bringing potato salad, deviled eggs, 7-layer salad, and cookies. I'm taking green beans and creamy corn.

Sounds good Volly.

If you like smoked salmon, I have a really good deviled egg recipe that is always a hit at gatherings.

Mexican potato salad....hmmm. What are the ingredients, besides the obvious?

Everyone makes it different so the obvious could be many things. Obvious, I guess is potatoes and eggs. I dice as small as I can about two stalks of celery and grate about a half stalk. Use about 4-5 pounds of taters and anywhere between 6-10 boiled eggs. 3/4 cup mayo and 1/4 cup yellow mustard and Sriracha to taste. Blend it in 'til it looks wet enough. The only thing that makes it Mexican in my mind is pico de gallo. I make the best I've ever had. So, I'll make a fresh pico and add it until it looks about right and taste about right. I'll add some diced nopalitos, a pinch or so of chili powder. I use Mexican onions when I can find them, regular green onions if I can't. Nothing fancy but I just call it my Mexican tater salad to separate it from the usual bland salad. Probably left some stuff out. I look at my spices to see if I want to throw something else interesting in there. Yep, pinch or so of ground cumin.
