Well, see there. You have brought up something I haven't thought of yet. I'm not educated on cold packing, except that it usually means raw. If it has more meaning than that, I'll have to investigate. I'm pretty sure it was cooked and she never had a "canner" either. I just remember everything they canned was the only way I know how.

On another note. I already made the mistake with Lima, are you male or female?

Cold (I think what I really mean is called HOT pack) pack is the jars are completly immersed in water and boiled..not sure how long but think greater than an hour. Everything had to be sterile! Rings, jars, lids, spoons, tongs, whatever. Time depended on what was being canned (acidity). Obviously green beans were boiled longer than other foods. You have to know what you are doing, if incorrectly done, food can spoil, you can get food poisoning, etc. Probably one reason Southerners eat vegetables cooked so long. Open the jars and cook long enough to kill the salmonella:p. I've done what I think they called cold pack, high acid like tomatoes. Also made homemade jellies, jams, syrups, etc. Never trusted myself enough to try anything low acid/hot pack. My mother was old enough to be my grandmother and I was the baby of the whole family, so I only got in on the tail end of stuff, never really participated or learned very much. But it was not pressure cooking I'm sure.

Female...it would take a very brave and self assured man to use my VN name and have a decked out toy poodle for an avatar:). But in her defense, she offers to fight the pit bull. She's 4.5 pounds of sheer meanness!

After searching the internet and a book I have that has a section that briefly covers canning, this is my conclusion. Cold packing is canning raw uncooked fruits and vegetables. They too get heated in thier jar or can. Hot packing is canning blanched or cooked fruits and vegetables. Both processes are used for other foods, but I ain't going there cause it doesn't matter for this. Hot packing is the safest. Cold is mainly used for tomatoes and cucumbers.

I now feel like I know all I need to on this subject to successfully can some chow chow, that is, if I ever figure out how to make the crap. Lol.

I was pretty sure you were female, but to be fair, you can't go simply by the username or avi. Unnermean what I stand?

Might just have to try it. Do you mix anything with it or just the way it is?
 
Back in the 60's, I used too help my Aunt prepare the ingredients for her chow-chow. She used a manual meet grinder mounted on a picnic table in the back yard. All the veggies came from her garden.

I wish I had paid closer attention to the ingredients or, at least, had her recipe. It was the BEST!!!

Crumbled cornbread mixed with pinto beans and topped with chow-chow. Dear lawd, I'm making myself salvate.

Maybe it was an actual veggie grinder.

It looked very similar to this one.

No, I believe it, I just don't remember any being the texture that would be rendered from a meat grinder. I would think it would be like a purée.
