The Swordfish would simply be brushed with olive oil and grilled with a dallop of sundried tomato and garlic mashed potatoes, garnished with scallions. The pork would be stuffed with Garlic boursin, baby spinach and roasted red peppers then wrapped in prosciutto and finished with a smoked tomato hollandaise. All of these ingredients compliment the other and I hate to screw up a nice piece of Sword by preparing it anyway but grilled. No what I mean?
