Nothing special there, but you do know the "star" of that dish is the swordfish and you don't want to overshadow it with some complex pork dish. I would pan-sear the pork then wrap it and bake. If you try this, you will find how well everything works together and still....the swordfish will shine! Sauteed green beans with lemongrass and garnished with fresh shaved Parmesan cheese would add a fresh zest. Do you have any green beans? :crazy:
