I thought mascarpone was more like sweet something.
More like sweet what? It's basically cream cheese that's so rich that its a little sweet and tangy like sour cream. It's a tad sweeter than Philadelphia cream cheese, but it's not like cake icing. It's not much different than ricotta.

Smoked salmon with mascarpone on peeled cucumber planks, thin sliced red onion, capers and fresh dill sounds pretty tasty.

I get my mascarpone knowledge from Chopped. It's always in desserts.

I've made cannolis with leftover mascarpone after making tiramisu and it's really good, not as good, but only because it's not what you're used to. It's sweeter than ricotta before the sugar is added, so it makes since to use it. But I still prefer ricotta.
