@MoodyVol, would you be kind enough to explain the origin of jerked chicken and why it's called "jerked"?
I have enjoyed many cuisines from around the world to include the Dominican Republic. However, I have never had jerked chicken. TIA
I asked the wife, Mother In Law and my Brother in law. No one really knew the origin but all know how to make it.
So I googled it! It’s pretty varied ranging from a Spanish word “chaqari” which refers to a process of poking holes, ( jerking), in the meat, to making cured dry meats, or jerky
Apparently, Jamaican Jerk is a form of seasoning and cooking meats with at least pimento and scotch bonnet peppers slow smoked over pimento wood. This seemed to evolve from a way of preserving meats by slaves that had escaped into the Blue Mountains. That group of slaves were called Maroons and the people that chose to remain in those mountains still are.
The term “jerk”, referring to cooking, seems kind of varied as to the origin.

@MoodyVol, I was lucky enough to get Grace’s scotch bonnet sauce from my daughter in law for Christmas. Remember what I told you, anytime you and your family would like to have some, let me know, I’ll send you some. I even have found calilou in a can.
