Was a nice day till about 30 min before the fireworks. Then the storms move in. They set them off anyway. We watched from inside our vehicles.
 
The ECB was running hot as heck. I think the oversized ash holes (#true story) I drilled in the charcoal pan are working too good. Had to wrap the base in aluminum foil to kill the air supply and drop the temp. Also dunked some charcoal in water and added them to cool things down. I think I had built an amateur smelter with my kiln brick lining the base as legs, lol.
 
Holding rock solid now. No messing for several hours except to add coals and wood chunks. 14lbs of pulled pork tomorrow if all goes well.
 
Poke is in the oven now and should come out about 11am and into a double cooler to rest for about 5 hours. Long rest times are my secret weapon.

I've got to try the double cooler. You think it would work with ribs too?
