fully expecting to be slapped silly but....
there is so much leftover roast pig that tonight I took some shredded pork, mixed it with a sweet bbq sauce, rolled it up in large flour tortilla's, and tucked it into a baking dish. Little sauce over the top then spread with a hot/spicy cheese mixture. Baked it off for 30 minutes at 350 <ugh> and served with a simple side salad.
Tasty.

but it's till too darn hot here in Connecticut.
I will be visiting TN next week to cool off. How weird is that?..............
