I would have thought those would be more commonly a flat grind. Most really sharp knife edges (and easier to maintain that way) will be hollow ground though as the concave curvature from the spine naturally makes the steel thinner towards the edge. For the same reason however not necessarily the right grind for hard use/chopping edges.

(and yes I saw the joke, I just rarely have the opportunity to dump some blade knowledge)

I think the specific use case is probably more for like paring or cutting end grain than chopping a mortise.

There are a lot of opinions and people whose actual hobby is honing an edge that will halve a mosquito who floats onto it without regard for how often they need to sharpen. I think it makes it seem overcomplicated and laborious to beginners so they use a wheel.

Yep. I could be pumping that extra $1000-5000 per watch into the local economy to help poor starving soy bean farmers and blue haired baristas. But instead I'm forced to help poor non starving Swiss families. My AD is a single mom so I guess that counts for something.

I'm going to steal lamentatin. Its not a word but it sounds like a combination of lamentation and lactation so I approve.

SNAP bennies going the way of the dod gonna wreck the single mom demographic. Any of them voting right wing probably will sing a different tune come Nov 2.
