What did you have for dinner II?

Well, funny story 👀. We went to the arcade and go-kart place (beach tradition). There was a seafood place right across the road, but sitting in the van I told them I didn't want to go that late. They closed at 10, and it was 9, didn't want rushed or leftovers. Anyway, we went up the road to Publix, and had settled on waffle house since it was that late. After coming out of Publix, they asked if I was saying that because of the clock in the van, and I was. I'm half asleep, and didn't realize that we're an hour behind here🤣. I missed it today, but that waffle and eggs was good 🤣🤣
You owe us a report of a seafood dinner.
 
love soups but have never seen cream of jalapeno.

Here is the recipe we have been using:
  • 1-stick of butter
  • 1-large onion chopped
  • 2-bell peppers chopped
  • 6-jalapenos chopped & seeded (leave some seeds for heat)
  • 1/2-cup flour
  • 6-cups chicken broth
  • 4-cups heavy cream
  • 4-cups colby jack cheese shredded
  • salt & pepper
In large soup pan, melt butter
Add onions & peppers
cook for about 10 minutes

Add flour & cook for about 2 minutes, stir constantly
Slowly add broth
reduce heat & simmer for about 10 minutes

Add cream, salt, pepper, and mix thoroughly
Add cheese & stir until melted

That is the way we had always made it. I thought that making chicken breasts in the slow cooker and shredding them added quite a bit to the recipe. It was delicious.

I think I am going to add garlic & cilantro next time.

Had empeñadas for lunch. Empeñada House in Duluth, GA. Finally, real honest to goodness empeñadas near me. Most of what’s sold/served as empanadas in North Georgia aren’t any good.
In Duluth?? Waaaa, it's not fair.

But I do like fixing them with puff pastry. It's a cheat, but it works like a champ, and no deep frying.
