I have never thought about the implications on servers reporting their tips because so many tabs are paid via credit and debit. Back in my day there was plenty of cash tips. Not so much now.

I think a lot of restaurants require servers to split their tips with the bar staff and maybe even the busboys.

Many ask for tip share or tip out. Back in my olden days of serving Brontosaurus burgers, it was on the honor system and not required.
I used to love to work Expo on fri / sat nights, and the servers would tip me, after the rush I would cover a shift for someone wanting to leave early. The only way for me to make better money per hour was bar tending.

As servers we had to tip out bartenders (which was usually 2-3 separate tipouts) based on a % of sales but bussed our own tables. It was already calculated on our end of shift docs. When I was a busboy at a Mexican restaurant we were tipped out by servers as well since we brought chips and cleaned up.

Regas did when I worked there in the 80’s. But it wasn’t clear to me the restaurant actively managed that the wait staff handled it I thought and they were pretty consistent.

When my wife was in charge of lease ups of new properties with her previous employer I went on a few recruiting trips with her to the nearby Hooters or similar. Tip out’s always came up in the conversation.

You might have served me. The first time I ever ate at Regas was in the 83-84 time frame when a vendor took me out to dinner there. I ordered the surf and turf and while the steak was excellent, the lobster had sand or some other grit in it.

I could have cleaned your table or brought your bread or potato out to the serving station maybe. I worked there during that time.
