What did you have for dinner II?

A weird meal, but enjoyable!

- sort of a bastardized chicken Marsala (changed recipes part way through)

- steamed backyard French filet beans with sautéed shallots and yellow peppers

- a surprisingly skinny heirloom tomato tart with backyard tomatoes (Costoluto Genovese, Mortgage Lifter, Rutgers, and SunGold cherries), basil pesto, grated Gruyère, Parmesan, and shredded Italian bag cheeses, and prefab pie crust

Original recipe called for boneless chicken breasts that I would then need to filet. I knew I already had some (I don’t even particularly like chicken breasts; why’d we buy so many?), and I pulled out everything I could find in the freezer, trying to come up with the correct weight. Finally, aha! Perfect.

Let the package thaw all day, go to cut open the package, and it was boneless thighs, plainly labeled. Memo to self: drink BOTH cups of coffee before starting to plan meals.

So I had to pick and choose from three different recipes to get where I needed to be. Goodbye brandy, hello Marsala, goodbye breast tenderloins, hello thighs (which I prefer anyway), hello pearl onions, you’re thawed so I’m keeping you. Etc.

My Dad and I met at Red Lobster today for a late lunch and had the best time and
the food was Great!! I had scallops and shrimp in a butter and garlic sauce with
a salad and baked potato and Dad had Salmon and a 7 oz sirloin and grilled shrimp.
It was the first time that we have eaten together at Red Lobster since 07, so it was
Great!
