I’ve never heard of NOT making enough for leftovers.
Well, I know that my grandmother always tried to make enough for leftovers. It’s just that nothing was ever left over.

—or more likely, there was some left over, but she decided - justifiably!!!!! - that there was not enough left to be “worth fooling with” and took care of it when cleaning up. 💕
 
Hey, I wore sweat pants both nights. No accompaniments, just chicken & dumplings (mine include the celery, carrots, and onions, so, veggies in the dish). Heaping bowls both nights, and I have ~4 cups left. Might eat that tonight. Haven’t made this in forever. Eating it three nights in a row isn’t overdoing it.

I included a whole chicken cut up, 3 large carrots, 3 ribs of celery, a whole Vidalia onion, and 8 cups of stock. I used 1&1/2 cups of flour to make the dumplings. The amount of chicken and dumplings was heroic. AND tasty tasty if I saw so myself!

Sweat pants (with or without the tie) should be required attire for chicken and dumplings!
