As I've stated previously, an undercooked baked tater can be improved by adding sour cream. A properly cooked baked tater just has sour cream take away the perfection of a properly cooked baked tater. I can't wrap my head around sour cream in mashed taters though.

Any tater cooked less than 8 months requires sour cream.
 
I dip restaurant fries in sour cream. Better than ketchup.
The biggest thing I've discovered while not having my taste sense is that texture still matters. I love crinkle cut fries, but I do need to dip them in ketchup. I had crinkle cut fries yesterday and just couldn't handle not dipping them in ketchup, even though taste wise there was absolutely no point.

It's weird though how amplified texture is without taste accompanying it fwiw.
 
2 lbs of red taters in 1/2 inch cubes...skins on
Boil till slightly less than mashed tater consistency
Stick of butter
Tbls of chopped garlic
1/2 cup (or more) sour cream

Stir till taters are broken up

Chow down

Smashed taters

I’ll admit, I add sour cream to my mashed potatoes sometimes at my work kitchen, just to give a slight tang to them. Me personally, it hides the taste of the potato. I know, STFU and NGAF.

Awesome, I love it! Can’t figure out how to wave my hands around to lock and unlock the doors, and the touchscreen display still alarms me, but a great ride.

The optional turbo is da bomb. Acceleration is very non-Subie. 😎

Wait till you drive it in snow. I used to pass people on two lane curvy snow covered mountain passes.

Yes, sour cream in the mix is good. At first I thought you were saying throw a clump on top of the mashers, that sounds disgusting.

I will say that mixed in sounds better than clumped on top was I thought he was saying too.

Also, feel free to hate: Idahoan brand instant mashed potatoes make the hassle of making homemade mashed taters worthless. They're unbelievably good (at least they were as of five days ago)

to all the non-sour cream baked tater people, do ya'll eat the baked tater skin or do you just eat the useless interior of the potato? Cause I coat my tater in olive oil and salt and pepper and I sure as chit eat the skin and errythang. And after you cook it for about 10 years you best beleeve eating that tater skin with a little sour cream is a got-dayum miracle.

Little Amish butter and some SC with some garlic powder (in keeping with the instant theme) and you have a dish.
