Yeah, it's been doing that to me lately too. I will try to get it and post it. I don't have the Pimento wood. Lowe's doesn't sell the chips and I ain't paying $70 online to get it.......Yes, lots of allspice.Jamaicans cook theirs using only pimento wood, I couldn't read the recipe unless I sign in and I didn't want to. Does it call for allspice?

Ive always liked her regardless of her affiliation with Flay boy. I hate Jerk anything, but only because it has always challenged me and many people think they have it right, and they don't.
IMO its like if some Jamaicans decided they were gonna do authentic American BBQ, and did it Memphis style. Seriously. Yea I'm bustin on TFG but what if the Jamaicans that were having it had eaten Texas style or Carolina style? And what if they cooked it in the oven instead of smoking it? Or used Cattleman's BBQ sauce? Like our BBQ, Jerk ain't just a seasoning or sauce, its a process.
Anyway, tifwiw. Make sure you use "Ground Allspice". There are spices in the spice section called Allspice and it aint the same. I'm not sure what she got going on with that recipe, but IMO it needs 1/2 teaspoon of nutmeg and 1 teaspoon of cinnamon added. I appreciate her mention of the pimento wood, that can be that "umph" that's usually missing. Pimento pellets are available here at Home Depot, so are wood chips.
I have a recipe I've used for a sauce. I use a seasoning for the meat and leave it on overnight, then cook it in a red stripe, pineapple juice and ketchup sauce....yea I know, blah blah blah. I still won't eat it on a hot dog.

Member.Crazy!! I was curious if I could find the discussion and pictures of the Chow Chow Experiment, I did and it was April......2017!? 3 years ago! I can't believe its been that long.
Anyway, I'm glad the fg mentioned it, think I'll make some. I think k I've had that brand TFG has before. If I remember correctly it was good.
