Sounds busy.For flavor and tenderness, a Chuck Eye Steak will hold against any cut at a fraction of the cost.
also like a good Grass Fed Center cut Sirloin.
And Ribeye, Filet, Prime rib as well.
But for downright good flavor, I'm going all Tyler Florence and Booby Flay....It's hard to beat the flavor of a well prepared Flat Iron. Had one in the skillet yesterday cooked off with rosemary and garlic, oil and butter.

Jimmy, that you?@rocytop2624 Definitely remove the membrane. Get it started with a butter knife then grab it with a paper towel. I almost always get a clean pull.
