So, you want that cooked albumen with the warm, liquid yolk, and you don’t want to risk disappointment with a poorly cooked soft boiled or poached egg. Order over easy.

Unless you’re at the diner on the coastal highway just south of Monterrey in 1980. That fellow behind the counter can poach eggs to make a French Chef scream his indignant frustration.

We had eggs over easy with jasmine rice and tofu & pork curry with eggplant last night. Take that douche baguettes!

I love to cook two eggs over medium with a little olive oil in my copper skillet. I can flip them without breaking them, then I slide them on top of salad greens. Season with S&P and lemon, and delish!!

Hubby makes the best scrambled eggs I've ever had.
Damn, that sounds good! Add some purple onion, shrooms and bacon pieces!
