Been kinda slack lately. Wife had hysterectomy, and youngest son went home to South GA with his older brother for a few days. So haven't cooked much. But when he stopped in last Tuesday for her operation (he was also on business in East TN), we smoked ribs, bacon wrapped poppers, and corn on the cob. The next evening vented open the charcoal smoker to crank the heat up and did a couple drunk chickens. Got us some Longhorn takeout Saturday night for her Mother's Day dinner. Gas station pizza (Hunt Brothers) last night. It's actually pretty darn good. Making red beans and rice for tonight when he brings his brother back.

Seared sea scallops and some leftover pork chop on a nice salad and although it seems kindof weird some roasted root veggies that needed to be cooked.

Not food, but next best thing. Background...Company does a lot of work in FL. Especially, South FL. I flew down twice a couple years ago to help oversee some install. Got introduced to Cuban coffee. Never tasted anything like that in my coffee drinking life. (Next closest experience was French Press coffee, and I bought one of those immediately). the Cuban variation of espresso is mind blowing. At the hotel breakfast the lady would come around with communion cup shots and you really didn't want more than 2. even straight, they are rich, velvety smooth and not bitter. Unlike typical espresso. And then you get the 4 oz. variation with heavy cream and sugar. Haven't had a decent cup of joe since. Until I discovered the Italian Moka pot recently. Stove top, non-pressurized espresso brewer. Have to make sure it is a true Italian made product or the metal won't be food grade. I mix with Natural Bliss Sweet Cream. Dead on the Money. It may be an Italian brew system, but the result is as Cuban coffee as one can get with going to Miami.

There's a sandwich shop down the road from me run by a Cuban couple. She makes Cuban coffee to die for - caramelizes the sugar, adds it to the espresso just so... Perfect cup every time!

He was a UT Professor and teaching in the Physics Department from 1966-1980.

To be honest, I'm more concerned about my son. He's 17. His brother (step son to me) is 27. And likes his drink when he ain't working. I'm hoping my son comes home as clean as when he left. lol. He has yet to partake of the world's offerings.

Cuban coffee is an art. and a pleasure for coffee lovers. After a cup of Cuban, Bunn drip coffee just don't cut it. Nor Starbucks.

You ever have traditional Greek or Turkish coffee. The beans must be ground to a very fine powder, which is left in the coffee when served.

Would have thought Kirkland came from Aldi. either way, good stuff. Smoked Salmon also good for someone that wants to see if they like sushi without going full raw. Nice middle ground.
