Apple Crisp recipe (@vollygirl)
For filling:
6 to 8 apples
1 table spoon flour
1 - 2 tablespoon(s) light brown sugar
1/2 teaspoon cinnamon
*1/3 cup apple juice
For topping:
1 cup oats/oatmeal
1 cup flour
1 cup light brown sugar
1/2 teaspoon cinnamon
1/4 lb butter
*pinch of salt

The last time I made this, I used 8 honeycrisp apples and unfiltered honey crisp apple juice (no sugar added). I only used 1 tablespoon of light brown sugar for the filling, as I do not like things cloyingly sweet. I used salted butter and so did not add the pinch of salt. I encourage you to adjust the basic recipe to your taste.

To make the topping, mix the dry ingredients together, then thoroughly mix in the butter.

Mix together the dry ingredients for the filling. Peel, core, and slice the apples. Dust the apple slices with the dry mixture. Layer the apple slices in an appropriately sized baking dish, sprinkling each layer with apple juice. If you have any juice leftover, pour it down the sides of the dish. Spread the topping to completely cover the filling. I make mine clumpy. Place this in the center rack of a preheated oven and bake for 35 to 60 minutes, until the apple slices are soft and the top is golden brown. Remove from oven when done and let cool for ~15 minutes. Serve warm.

That reminds me of the time my girlfriends dad asked me what I do. Apparently, "your daughter" wasn't the right answer.

I think I found my answer for the dressing.

When Nanny or my mom would mix it up, they would always put some in a bowl for me cause I liked it before it was cooked. My ex-husband's grandmother would do the same. It's bascially just crumbled cornbread, white bread, celery, grated onion, poultry seasoning, salt and pepper, and stock. Baking it dries it out makes it "firm". So putting the mix in a crockpot should have the same result as this recipe!

Our menu this year stays pretty traditional since the in laws will be with us.
  • Turkey (although I'm thinking about braising the thighs and just roasting the breasts)
  • Mashed potatoes
  • Candied sweet potatoes
  • Biscuit dressing
  • Double batch of gravy of course
  • Kale salad with a pomegranate vinaigrette
  • Spiced apple cake
  • Various TBD pies probably including pumpkin, apple, and something with pecans
  • Assorted libations
  • Mulled apple cider

We will be at the in laws again this year. They don't do turkey, they do ham and dressing. Thanksgiving is my favorite holiday and for the last 3 years it has been less than stellar. Up until then we had 2. One at home just us and the other at the in laws. I have given up on getting to cook Thanksgiving until my MIL is no longer alive. On to Christmas...
