Mayo has it's place, it's delicious in some uses, but horseradish isn't supposed to be creamy.

Horseradish sauce is creamy. I know you don't eat it with your prime rib, but alot of people don't like it straight and love the sauce. I like the sauce with fried mushrooms, fried zucchini and fried pickles.

Haha, this about my prime rib story?

It was a big deal for me. I was new to this type of operation. I was more of a dockmaster, buyer, price setter, shrimp grader and trip scheduler than I was a restaurant manager. It was awesome. Best experience of my life. The stories!!

I won't go deep into it, but tbe shrimp boat Captain Roger, told me he had a whole hind quarter deer his son gave him and didn't know what to do with it and asked me if I wanted it. I told him to bring it to me.

Long story short, he brought it to me and I cut it all up in steaks, marinated it in Wishbone Italian dressing and grilled it with a bunch of onions, peppers and mushrooms. Set it out on a big platter for him, his mates and their wives/girlfriends and had a server take care of them.

That was my first year here, 1997. Roger still brings me fresh shrimp, fish and squid off his boat when he's in the area. They all still talk about that night.

Ill shut up now.

Just my two cents, but horseradish sauce does have its place, Turkey sandwich on rye with provolone. Cold on thanksgiving night, that is all,
