Upside-down leftover tacos... chopped up a few leftover roasted Brussels sprouts and a few leftover sauteed mushrooms, added this to little bit leftover taco beef and a little bit of leftover poached chicken, reheated the lot in a pan, and used it for taco filling. Put fresh baby spinach leaves on the bottom of the hard taco shells, then chopped seasoned baby san marzano tomatoes, then shredded orange & white medium cheddar cheese, then the hot veggie-meat filling, finished a drizzle of red sauce. They were tasty.
