What did you have for dinner II?

Mexican. Had a daddy daughter date with little bit, and that's what she wanted.
 
Went on a boys trip to hunt swan and ducks so had some guy food :) Appetizers :Grilled diver duck breasts wrapped in bacon with cream cheese and jalapeño jelly and some of my dry aged ribeye steaks with baked sweet potatoes and a salad. The next night fresh NC fried speckled trout and oysters at local restaurant.
 
Some of the swim moms wanted to do dinner this week just to help. The lady who brought dinner today is from the Dominican republic, and said she made us an old recipe from home. She called it roasted chicken tortilla something, but my goodness it's good.
 
The missus and I made crunchy tacos (blue corn taco shells) with ground beef & onions, shredded white cheddar cheese, chopped grape tomatoes, and lettuce. Red salsa applied to taste.

Inside Grilled salmon steaks with Citrus Vinaigrette marinade, Baked Sweet taters, and mixed green salad. Salmon came from a old friend who goes to Alaska every summer and brings me back some Halibut and sockeye and it is awesome.

You cook them in a loaf pan? What a great idea!

I always did wonder how to make the little barstages stand up!
Yes, the recipe I followed had a video with it and they showed cooking them in a loaf pan so I followed! I haven't cooked them this way before and this is definitely the way!

My wife found and acquired a pyrex "loaf" dish(?). I've only known metal loaf pans. Now, I know what to cook in it - stuffed peppers!
 
The wife doesn't cook often but when she does its baking something.
Pheasant pot pie with lots of veggies, white gravy, pastry crust n the bottom and sweet cornbread topping.
