All Thangs Pussum and Chad Thread

I know there’s ham, turkey, and I requested creamed corn over the corn pudding they served at Thanksgiving. I’m not a big Thanksgiving/Christmas/Easter dinner person. Would much rather have lasagna like @malinoisvol mentioned, even though I’m not sure if he forgot blue font or not.

I guess a better question would be: Does your family usually to the traditional spread....ham/turkey/mashed potatoes/etc. or something non-traditional like @malinoisvol?
Our 36th Christmas together and this will be the first one that did not center around a ham or turkey.

I’m ready to do something different. I kinda enjoy all the kitchen fireworks at Thanksgiving, but now with The Tiny Terror old enough to go wild with Christmas presents, I’d like to switch to something that can all be done ahead and served buffet style, some hot, the rest room temp or cold. I’d rather have fun watching him try to eat bows than figuring out timing issues for the oven.

In addition, Tiny Terror’s mom (Daughter #1) alternates call yearly on Christmas and New Year’s, so she’s at her in-laws on opposite years, and we do Christmas on a different day when they get back (12/30 this year.)

In fact, this year hubs and I will be alone on Christmas Day with KCSM on the Bose, Gloria Ferrer Blanc de Noirs on ice, and who-knows-what for dinner.

I haven't been blessed with grand young'ns yet, but, we will have the youngest and his wife here for dinner. The oldest will miss this year as he is in Okinawa getting ready to transition to Alaska in March, so we'll get to see him then.

Ha, I just looked, and KPIG is trying to stream again. Might have to give it a try. I miss the Pig!

Unrelated, but we've had to put our 16-year-old cat on canned food. She didn't take to it kindly until I read about feeding rabbit to cats, which makes sense (if you live in the country with a cat and have found parts on your front door mat.)

So I now have to hunt down canned rabbit, aka chopped-up uckle widdle bunny bits. Not found in grocery stores, as I guess it's a marketing nightmare. At our local Petsmart, it's one aisle over from rabbit food, as in food that you feed to rabbits. To fatten them up to become cat food, perhaps.

That's what we get! 95% (no lie) rabbit. The rest is something like peas and carrots, which is weird, but there you are. They also have shredded (semi-moist) and these dry pellets that you can crumble over other food to perk them up. Halo has a pretty good selection too.

Rabbit is about 1/4-1/3 of her diet. The rest is Newman's Own Chicken and Brown Rice. I don't know how she became so high-maintenance in her old age... (but I was looking for low-carb)

  • cup sharp or extra sharp cheddar cheese, shredded
  • 4 tablespoons salted butter - melted
  • 2/3 cup fresh bread crumbs - divided in half (panko works nicely if you have it on hand)
  • 1/4 teaspoon red pepper, or to taste
  • 1/2 tablespoon dry mustard
  • 1 teaspoon smoked paprika - preferred but optional
  • 2 cups buttermilk
  • 1/2 cup half & half or milk at the least 2%
  • 4 egg whites, lightly beaten
  • 1 cup of a Mexican cheese mixture
  • 2 cups (8 ounces) shredded American cheese (I buy block from the deli)
  • NOTE: feel free to choose cheese of your choice, but keep the cheddar on top, it creates a beautiful glaze after the Bundt is inverted.
  • 4 cups cooked, still hot, elbow macaroni (equals 8 oz dry)
  • 10 or 12 inch Bundt pan (the cooking time is written for a 10 inch)
