Sauce sounds good. What kind of restaurant or style of food you cook. Have you ever made Gyros?

Its a perfect easy compliment for salmon cakes/fritters/patties.

I'm a student of all cuisine so its difficult to answer your question. I have more knowledge in some areas than others obviously, but what I don't know very well, I know where to find the best answers.

Likely, he "stacks" chunks of unprocessed meat on a standard horizontal rotisserie skewer, captures drippings, and bastes the meat to approximate the vertical process.
