when y'all are done eating cornbread, will someone go give Chad Winthrow a giant wedgie for the fake news crap?


I wish someone would, personally I try not to listen to him or the other two on 104.5. They can be just a little to arrogant for my taste.

I am talking about a full size pone, flipped in the skillet. I like hoe cakes too! Butter and honey on them!

I'm going to try heating up some bacon grease and putting it in the batter, that sounds damn good!



In modern times the "grease" of course is Wesson oil, Canola oil, or vegetable oil. But back in the day, sitting by mamas stove was the jar in which drippings from the bacon was saved. This bacon grease was used in baking for cornbread, pie crusts etc. It was only later that we learned that this is what clogs the arteries and kills us. But you want to make some good cornbread, use bacon grease and buttermilk.

Crisco and 1/4 cup sugar, unless you are eating with barbecue, than add 1/2 c sugar. And yea, leave 1/2 the crisco in the skillet.
Butter goes on the bread about 1 lb per slice.

My momma poured the grease in. How you do it doesn't matter.

You know every time someone has told me about their favorite cornbread it's always momma's or grandmas version that is the best. For some reason their recipes can't be passed on, he** most of the time they don't have a written recipe. It is like a gift from God.:dance2:

I remember my Papaw telling me about growing up during the Great Depression, and cornbread and milk was his supper many days. Anyway, I think Petersen will be here and ready to go.:yes:

You can't beat cracklin cornbread


I can. I've beaten it before until it was chunky crumbs. Then gathered it up and put atop my cayene flavored pinto beans. Then along with mashed sweet potato, turnip greens, squash and a frosted glass of Bud; claimed victory.

I can tell you are a yankee. I would NEVER make cornbread with Wesson oil, Canola oil, or vegetable oil. Yes, it is in the batter because I don't use bacon grease to cook with due to said health reasons. However, you always use Shortening in the pan. If you aren't then you aren't getting your skillet hot enough. You need to go above the smoke point of the other oils.

Well, I am telling you that I make it better than my mama and both of my grandmother's. Period. And I grew up eating the stuff nearly every night.

that looks great.

For those of you who may not know how to make cornbread, I'm gonna teach you!

take a cast iron skillet as shown above and heat it up--hot with oil in it--bout 1/8 to 1/4 inch...

while it's heating you mix two cups self-rising cornmeal with two eggs and about half cup of milk--or buttermilk and when its mixed pour most--not all of the hot oil in and stir loosely into batter.

dump the batter into the hot skillet--it still has oil in the bottom.

now you place it in a hot oven 425 degrees and cook approx 15 minutes. You will smell it cooking and then when brown, take it out and there you have it!

The way mamma used to make it!
