Tin, my dad and his fishing buddy fillet 3 or 4 messes of crappie per week. Dad uses an electric knife with expertise to fillet them. He swears by it.
 
What's the best type sharpener to have?

I agree with you on the knife sets. I, more importantly, she, believe we need only the three knives - Plus a good set of steak knives.

Like I said, as far as the electric type, I don't know. I'm sure there are good ones and if that's what you want, I'll do a little research for you and give you my opinion. Fwiw.

As far as "old school" a good diamond steel is perfect.
 
Cool. My wife has one that sticks to the counter top. I'm thinking it probably ain't the best thing.

This is the one I have. I like the "oval" better than round. It gives you more sharpening surface.

Haha, I don't use an electric, I have a very sharp boning knife to use with filleting fish. But if I had one, I'd probably try it.

What type? Got a brand name and model number?

Made by "Smiths". I was wrong about the suction thingy. It has an anti-slip pad on the bottom.

ETA: Must be a discontinued model. Can't find it on the Google.

My boning knife is shaped differently than my filet knives. It's suitable for working around the bones found in beasts. The filet knives were perfect for fish before sisters from Detroit got their hands on them...
 
I hope Mal buys some knives soon, and posts some pictures. To me, The next best thing to getting new kitchen stuff, is friends showing me their new kitchen stuff.

One of the greatest things......ever. Restaurant nickname, motorboat.
 
I use the strip for mine too. I have two chef knives, I like 'em both and have no idea why I reach for one over the other, I just know which one I want for whatever I'm doing with it. One of them is a santoku. Also have a bread knife that I hardly ever use, but when you need one you need one. And then I have the death knife. I also have one paring knife in my kitchen, couldn't tell you what brand it is but I can tell you I didn't pay alot for it. I've had it forever, hardly ever have to sharpen it, and I would say it's my favorite knife in the entire kitchen. Also have an electric knife that I use for turkey (or ham if everybody is there for dinner), and to slice King's Hawaiian Rolls when I make sliders for the family.

Maybe you reach for the one you know is sharper.

I use my chefs knife the most just because I'm used to it. I'm trying to use the santoku more often. I like it mainly because food doesn't stick to it when slicing like the chefs knife.

Death Knife? Butcher?

I hardly ever sharpen my paring knife either because I don't think it needs it. But after I do sharpen it, I always say damned, I need to do that more often.

I'm doing well, sir. Kids all doing well. My little one is 8 months. Growing too fast. My oldest should be home from Japan later this year.

Wow, 8 months! It doesn't seem that long ago. Glad she's doing well.

Yea, I saw your post about playing a video game with your son, that's cool. I'm sure you're looking forward to seeing him.

Ft. Myers Average total rainfall for June is 10.09 in.
As of yesterday the total is 5.59 in.

It's raining now and supposed to all day.

Woot! Just got my seeds. The second order. Took a week and the others still haven't arrived and today is week 7.

I have 5 Carolina Reaper seeds and 5 Chocolate Moruga Scorpion seeds. Will start the germination in the morning.
