It was cooked perfectly. And the sprouts were excellent. There was parmesan that went on top. My wife has a bad habit of occasionally forgetting to add everything to the plate before she takes the picture.

IMO, just from the picture, everything looks cooked perfectly.

Yea, you've mentioned she has taken the pic before her "finishing touch" before. Ain't gonna lie, I'd like to see it the way she intends to serve it, but I'm just glad you both take the time to do what you do. Seriously, I appreciate it.:thumbsup:

I don't know if she does it on purpose or not, but as far as I can remember, the few times she has prepared beef or lamb, it's been on a white plate. In most cases, they should be on a white plate.
 
Normally, I'd have started peppers from seed already (indoors). The new vegetable garden plot is smaller than the last one. Besides maters, wifey's requests include bush beans, herbs, and bell peppers.

As I posted earlier, I'm a habanero fan. The missus doesn't care for the heat of habaneros, so, I was checking out an alternative. She might just OK space for an "alt-hot" pepper. :)

Gotcha! I forget some "men" have to ask thier wives permission for everything.

Seriously. Now that you brought it up, it may be worth 3 bucks for me to get some seed and grow a few just for the hell of it. I've already started my herb garden and maters.

That's a great thing about living here, I can grow stuff like that pretty much anytime.

I've never had the opportunity to try anything "Carolina Reaper", but plan to. I have some Smoky Ghost Pepper Jack Cheese in the fridge now that is really good! I have a note in one of my notepads "Ghost Pepper cheesecake". When it happens, I'll report back.

the Chef at our clubhouse, makes a Ghost Pepper Vanilla Ice Cream

It taste just like vanilla bean ice cream for about the first 3 seconds, then the ghost pepper kicks in at the back of your mouth

I know you said you don't visit this thread because you're dieting. I've noticed in the "dinner" thread in the Pub you've been posting " salad, salad again, baked sea bass, baked haddock.....etc" and you posted the other day you were headed into the gym.

How's it going?

Lol, just kidding. I know you haven't made it and probably won't. Was pretty sure you wouldn't when I posted it, but it was a good exercise for me.

I still visit this thread. :) It's one of my favorites.

Down 10lbs and one size. It's taken me 5 weeks. Amazing how slow it goes when you get older. :thud:

I'm going to attempt cauliflower rice tonight. Anyone ever tried it? Got any tips? Ways to season the "rice" that would be a good healthy version?

Hardest part about it is getting all the moisture out. Use whatever you would season rice with. I use garlic, soy sauce, and cayenne.

My son had no idea it wasn't rice.

I used a cheesecloth. It works good, you can wring the moisture out, and it won't leave lint.

A co-worker had seen my post on fb about making it and commented "is the cauliflower good?" when he walked by at lunch the next day. My son said "it's fried rice". I said it's fried cauliflower. :lol:
 
It'll have a little bit of spicy on it's own (like raw cabbage does) so keep that in mind when you season.

Didn't you find using a cheesecloth for the cauliflower rice a pain in the behind?

I wish I could tell you some extremely involved technique that would amaze you, but I can't. I like the flavor of sautéing it, but ...for a "rice" like texture, I found the microwave to be the answer. Grate it or use a food processor, add a teaspoon of olive oil, cover it tight with plastic wrap and about 3 minutes later....boom.

I like the grated better, but food processor is so much easier.

And I use the microwave to draw moisture out of mushrooms before using them in a frittata. Is the cauliflower wet when you take it out, or dry?
 
I'm still "playing around" with different cauliflower uses, rice hasn't been part of it because honestly, I put it in my Mac and chez category. Haha, but that's just me. One way I tried it last week was poached then roasted with whipped goat cheese. I'm not a big fan of goat cheese, so I added some cream cheese and Feta to tame the strong flavor of the GC. I will do this again!

It's just right. Nice and fluffy like you want it. I didn't use any seasonings before cooking, just the olive oil.

Two pounds/ week is actually pretty dang good. Once we're out of our 30's, that's real weight loss. :eek:k::victory:
