True. But the idea of only one came from the question about 247 COMPOSITE rated 5* players. That's hard to do because the composite takes 4 different services and averages them. If just one rates these player a 4*, then said player would be a composite 4.75, of 4*.
Translation ... we're splitting hairs over junk science.
So you were happy and excited that we are in the conversation for the NC.

At this time last year Auburn was also in the conversation for the NC. Stop acting like we've won anything yet. Maybe this team improves and maybe we play our way into the top 4, but right now we are going into at least 3 games with a lower recruiting average.

Stars are great for judging natural talent... But work ethic and accountability makes up a lot of ground.
That's not how the star ranking system works. Players are rated from 0 - 1, the 5 stars are normally around .98 and up. Each service wants to keep their number of 5 stars low, around 25 a year so the points it takes to reach a 5 star ranking will vary based on the talent that year. 247 averages all those scores together and hands out their composite 5 stars to the top 25 players.
Do they miss? Yes, sometimes, but as Bama has shown it isn't a coincidence they have had the #1 recruiting class for the past 6 years and have won 4 of the last 7 national championships.
Actually, it is top 32. It is who sportswriters project to be first round draft picks 4 years down the road.
The reality is, we have to start doing two things before 5 star players start knocking at our door. A) Compete for conference and national championships and B) Show that we're putting players in the NFL. We start doing those two things year after year and we'll get a lot more 5* players.
Very true. If we do well on the field then recruiting success will follow. This is the year to prove to everyone that the Vols are for real.
Right now, our 2017 class is ranked where a Kentucky class is generally ranked. It would end up being about a number 25 ranked class, and that doesn't cut it. I'm sure Butch will be doing some culling, a star average that is below 3.5 is a bad thing for sure. Teams that recruit like that DON'T will championships in the modern era. You can survive one sub par recruiting class, but that is about it. Florida's last two recruiting classes had a star average below 3.5. Just watch the next couple of years, they will struggle.
They're not all diamonds in the rough, and those that recruit the most 4 and 5 star players ALWAYS have the best chance for a championship run. Anyone who thinks otherwise is delusional.

Star ratings certainly gets a player on the radar. However, you have got to have faith that CBJ and his staff have the vision to see what a player will become. That is to judge his playing character, his desire to be the best he can be, the willingness to be team player, and his desire to win.
Another perspective is if you put all your eggs in one basket and tell potential 3 star recruits you are holding out for all the 5 stars and you (might) get 1 or 2 late in the process ... you'll end up with maybe a couple of 5 stars teamed up with a bunch of 2 stars and walk-ons.
