I'm a huge fan of mayonnaise, but dipping fries in it is nasty.

Escargot en croute done right would change your mind. Gayrontee.

I know you are, only reason I’m out on mayonnaise is I grew up watching dad (who like you and others love mayonnaise), slathering on any piece of bread and oozing out of every corner, grossed me out. It stuck with me. When I had Escargot for the first time, was at a place in Kingston, Jamaica on Stony Hill, won’t rule out trying them again in future. Just have to fortify myself first.

I would have had snails if we had ordered individually, but it was pre-chosen family style. I love those slippery little suckers.
Back around 98-99 I came across a recipe in an Auguste Escoffier cookbook, at the time I had tried them but never prepared them. Since then I have had them and prepared them several ways and they are one of my favorite hors d'oeuvre's. Definitely one of those things that could turn you off forever if not done right. Can't buy a cheap can at Piggly Wiggly, pour them in a bowl and nuk'um.
