Back around 98-99 I came across a recipe in an Auguste Escoffier cookbook, at the time I had tried them but never prepared them. Since then I have had them and prepared them several ways and they are one of my favorite hors d'oeuvre's. Definitely one of those things that could turn you off forever if not done right. Can't buy a cheap can at Piggly Wiggly, pour them in a bowl and nuk'um.I would have had snails if we had ordered individually, but it was pre-chosen family style. I love those slippery little suckers.
