Yes you can letter for 5 years in college. Last known player that is well known is Cody Picket from washington. As a freshman backup he played 3 series but was granted a medical redshirt and played 4 more seasons.

You letter for simply playing on the field in college anytime in a season.
If this going where think it is, Hardesty would letter this year with a medical redshirt. He would still have 4 years left. He could potentially be a 5 year lettrman.

I also see that Roscoe Word did it in 1902, '03, '04, and '05 then came back and got another in 1907.

Cody Pickett of Washington played 3 series in a single game and still lettered. He was still granted medical redshirt. Sports information direction at UW state that he was a 5 year letterman.
