How big is your smoker, or are you talking about a baby gator? I've always assumed based on the TV shows, that since a tag was required to harvest, small gators weren't harvested in favor of larger ones

10-15 lbs is the sweet spot for tender meat and fitting on most grills.

I believe they only have small packages of tail meat. Will check tomorrow.
