What did you have for dinner II?

OK, Joe, I admit to enjoying pasta a olio (basically, pasta tossed in butter and olive oil), but just plain boiled macaroni is food for recovery from sickness.

I grew up on “loose hamburger and noodles”.
Basically macaroni noodles fried in butter until super crispy, hamburger with seasoning fried on the side.
So good.

I’ve searched ways to cook delicata squash. The most popular is to cut then in half, deseed them, then cut them into 1/2 inch strips. Toss these in olive oil, salt and pepper, and roast these in a 400 degree oven, 8 minutes per side. I’ve done this, and it’s good.

However, cutting the squash into 1/2 inch cubes, tossing them in olive oil, salt & pepper, then sautéing them in a pan allows them to caramelize, enhancing their sweet quality to compliment the seasoning. Yum! 😋
