Cock-a-leekie?Need some help/ ideas!
I have two leeks in the fridge. No idea why, other than it seemed like a good idea at the time.
I’m reading recipes online, but nothing is really floating my boat, mostly seeing potato-leek soup and cock-a-leekie, which look good, but.
Any ideas for what to do with them? I can pick up some more if needed. I was thinking in the casserole-pot pie-stew vein. Something thicker and heartier than soup.
We have a lot of leftover turkey, fwiw.

I don't use leeks often. They are basically giant green onions, as far as I'm concerned. So, I use them as such. The whites sub for anything that requires normal onion. The green subs for chives or anything that needs a hearty garnish. If all else fails make chili. White chili can be awesome, and only a small compromise btw.Need some help/ ideas!

Whenever I do this I tend to get ravenous. Ordered Chinese Takeout...
Chicken & Broccoli, Won Ton Soup, Chicken Fried Rice, Egg Rolls, and General Tso’s Chicken. Just two of us and ordered the large portions of each.
Bag was HEAVY!
