What did you have for dinner II?

Expound on "loaded cauliflower," please. Ingredients and how you prepare it.
Sorry, just now wandering back into the VN orbit.

There is no way to pretend that this is a healthy cruciform veggie side. It is a decadent, artery-clogging peek at Glory.

I've made this several times (a half version) with both a real cauliflower and a 15 oz. bag of frozen cauliflower florets (Publix.) As much as I cook from scratch in almost every case, there's a lot to be said for the bag version (don't bother to steam first), after attempting to clean up 5 billion molecules of cauliflower from the counter, the floor, random spots on the gas range, in my hair, on the cat, etc. after slicing the head into 1/3" or so slices, and then cutting them down again. The cauliflower is really just a vehicle for getting all the illicit naughtiness into your body, so whether it's roasted virgin artisanal organic biodynamic carefully-hand-sliced pieces, or chunks from a bag, doesn't really seem to matter much.

I realize that I'm going to hell for saying this.

Just made it up - chopped onions & peppers, shredded meat from a leftover chicken leg quarter, left over tomato masala cooked to a paste, drained small red beans I cooked the other day, a little beef bone stock. Simmered these together for 1/2 hour. Served it with a dollop of Greek yogurt. It's not chili, but it's hearty and tasty.

Air fryer roast chicken
Zucchini-squash pie, with onions, sun-dried tomatoes, mushrooms, eggs, shredded Mexican cheese, and herbs from the garden (not yet dead!!), in a leftover deep dish pie shell that had been rattling around in the freezer and getting on my last nerve.
