What did you have for dinner II?

The hardest thing here would be finding a whole chicken. lol I like to never found them a few weeks ago when son was coming over with his smoker.
I know, right? I'm still amazed at how ridiculously excited I was when my online order for a chicken actually resulted in a chicken in my trunk one week later. And I had one in the freezer!

At my parents for the last few days and we are hoping we have him placed in a memory care facility Tuesday. Been a battle but this pandemic thing has screwed the pooch Royally.
I fixed a sous vide lamb with lemon rosemary garlic, sautéed veggies and a hot spinach salad and some homemade bread my wife sent. me ,mom and the caretaker helper enjoyed it but we fixed my dad puréed veggie soup since he can’t really swallow anymore. my mom was crying at dinner because she said my dad would so love the lamb... its killing her but she’s ready to have him taken care of 24/7. Gonna have to have her come stay with me and the wife and cook some good food.

So, so hard. Blessings to you and your family and multiple virtual {{{{{hugs}}}}}. There is just no way of getting through this other than to keep on doing what you need to do. I know that this is especially hard on your mom. Love and prayers to her, and to all y'all.
 
Air fryer rotisserie-style chicken
Loaded roasted cauliflower (cheated with frozen florets, and I may never go back)
Lima beans with onion, garlic, parsley and oregano from the rainy back deck, and ground lemon pepper, prepared by inattentive cook

Expound on "loaded cauliflower," please. Ingredients and how you prepare it.
 
Air fryer chicken is so mouth-breather simple! And so tasty.

That is now one of our go to dinners. Air fryer chicken legs. Wife likes them better than grilled. Season, run through the cycle. And they are crisp and looked grilled. And taste really good.
 
I've been preparing roasted cauliflower masala for years. Cut up head of cauliflower, toss pieces in turmeric-infused olive oil, spread these out on a baking sheet, roast at 350 degrees F until done. To crushed tomatoes, add cloves of roasted garlic and garam masala seasoning to taste. I blend the garlic & tomatoes in the cook pot with a handheld shaft blender. You can mince or otherwise prep them before adding. I allow the curry sauce mixture to simmer and reduce a bit. To serve, I place the roasted cauliflower pieces in a shallow bowl and surround them with the curry sauce. Mix and eat to your own taste. Simple dish, very popular in my household.

Alternately, I've steamed a trimmed head of cauliflower, placed it in a serving bowl, and smothered it in a cheese sauce.

The idea of " loaded cauliflower" is one I've yet to entertain. I'd like a third option to the above.
 
I'm loading the crock pot up at lunch for dinner.

Soaked white beans overnight in fridge. Load up with Minced bell pepper, onion, salt, white pepper, garlic powder, black pepper, tinch of cayenne and left over ham. Serve over rice. A little something my minlaw used to fix with left over picnic ham for all the family Cajuns.

If there's anymore ham leftover after that it may be time for Tater Stew. Haven't fixed that in years. Another of her dishes. Peel, cube, and start cooking down taters with water, ham, salt, pepper, cayenne, pinch of garlic and onion powder. Keep cooking down, stirring, adding water till semi-broke down. Half chunky. this stuff is good and it will bite. Can tone it down if you like but it was made to have a slight kick.

Not sure what to do with the left over Lamb, except keep eating it. Maybe a Lamb stew? Except its already Italian seasoned from the smoke session.
