Surely there is more to the story.
There are rumors all over Reddit (grain of salt) that the real reason he was canned is a relationship he was having with a nursing student. Having one drink with other coaches after hours is not "serious professional misconduct," especially at a campus/in an era that does not have a problem with alcohol, to put it mildly. It also apparently was something of an open secret on campus, kind of like Moore's relationship with his assistant.

The previous coach had a nice run of success before bolting after last season, but it isn't like this guy had a bad season (8-4 and beat their biggest rival).

It’s not the cigar that get’s you, it’s how you flavor them… BC prolly.

Turns out that's precisely what it was. Sounds like he's going to argue that the university has no rule prohibiting relationships between employees and students, and he also wasn't her supervisor/in a position over authority over her. Don't know if that will fly.
