If done correctly a Game of Thrones game could truly be epic. An open-world Westeros would just be incredible.

This. Skyrim with your favorite characters. Obviously you shouldn't be able to be them as their fate is very fluid. A knight or common man would do. You could join the faceless men. :O

Just think of being able to get into a ship and sail to the Iron Islands, or being able to walk up to the wall. I would pay whatever was asked of me for a game like that.

Would have to be an MMO I would think considering how expansive that universe is.

Nah. Assassins Creed: Black Flag did a HUGE open world and it wasn't MMO. There were several islands and locations you could sail to and they were all unique and several of them were quite large. You just wouldn't be able to go along side the whole Wall. It's supposed to be over 200 miles wide iirc.
