I can't say for sure but I imagine it's because they don't trust Maurer to get them in the right plays/formations based on the defense.

Mathis wasn’t his first choice. He recruited John Rhys Plumlee and that was going to be their guy in the ‘19 class but he ended up flipping to Ole Miss when he found out Chaney was leaving for Tennessee. Mathis was a last second flip from OSU who didn’t do much to hold onto him
