Thinking about taking the family on a scenic drive at one of the state parks or something similar to get out of the house. Maybe looking for a nice park with a waterfull within an hour of Nashville. Any recommendations?

Fall Creek Falls is just a tad over an hour from Nashville but worth the drive. Rock Island State Park has some really cool waterfalls. Bledsoe Creek SP doesn't have any waterfalls but has a nice trail. Then you have Cummings and Burgess Falls.

If you head out the Natchez Trace from Highway 100, you can check out Jackson Falls. There is a reasonably easy trail.

Burgess is just over 1 hour. Not far off of the interstate. As Hog noted you could see Cummings also in the same day.
Fall Creek Falls is about 2 hrs.
Tons of falls near Cookeville and the Cumberland Plateau.
There are some closer.

Typically seeing a fall at z state park will require a walk. If you have small children be cautious.
